Baileys Geateux

A simple sponge cake filled with fresh strawberries and cream, covered with Cadburys chocolate and decorated with strawberries- the perfect birthday cake.

4 large fresh eggs
4oz caster sugar
4oz self raising flour
1 pk fresh Wexford strawberries
200ml fresh cream
200g Cadburys milk chocolate spread

Method

Set oven to 180c
Grease + flower 2 sandwich tins
Beat eggs + caster sugar to resemble a pale mousse
Sift flour and fold in very lightly with metal spoon
Pour the mixture into the two tins, tilting to spread evenly
Bake for 20 mins + cool on wire rack
When cold sandwich together with whipped cream + sliced fresh Wexford strawberries.
Cover entire cake with chocolate and decorate with strawberries and a sprig of fresh mint.
